- De Cecco's Rag alla Bolognese was created in collaboration with renowned three-Michelin-star chef Heinz Beck and prepared while preserving the recipe's original simplicity: extra virgin olive oil is combined with a rich mixture of onions, celery, carrots, and a select range of certified Vitellone Bianco dell'Appennino Centrale PGI beef, pork shoulder, and pancetta. Tomato pulp and tomato pure are then addedall typically Italian ingredients.
- In Central Italy, Vitellone has traditionally referred to cattle aged 12 to 24 months. At this age, the meat of the Chianina, Marchigiana, and Romagnola breeds is particularly tender, high in protein, low in cholesterol, and very lean.
- Central Apennines refers to the protected designation of origin, as the Chianina, Marchigiana, and Romagnola cattle breeds have been traditionally raised in this region for more than 1,500 years. They feed exclusively on hay and forage plants from the region, giving the meat its unique, distinctive flavor.
- Protected Geographical Indication (PGI) is an EU certification for the quality of typical products, based on strict production requirements governing the entire production chain.
- The animals are primarily raised extensively on pasture, especially during the first months of life, mainly in peripheral areas. This contributes to preserving the soil and the characteristic landscape of the Central Apennine hills and mountains, while protecting the history and centuries-old traditions of rural communities in Central Italy.
