Liquid pectinolytic enzymes, 10 mL. Enzyme preparation for liquefying fruit mash. This natural, pectin-degrading enzyme is stirred into crushed fruit. By rapidly breaking down the cell walls, it releases the fruit juice so it can drain more easily. This significantly improves juice yield and makes pressing easier, while giving the juice a more intense color. Dosage: 2 mL per 10 kg of fruit, must, or mash at 20 C for 12 hours.
