Hildegard's spelt muesli Allos Hildegard's Spelt Muesli is made according to the original recipes of Hildegard of Bingen. Hildegard of Bingen lived from 1098 to 1179 and was the abbess of a Benedictine convent near Bingen. She created a holistic work on nature and healing that is now considered one of the most significant records of monastic medicine. This delicious muesli creation was inspired by the famous spelt-and-oat porridge, a cooked breakfast dish. The result is an easily digestible spelt muesli refined with fruit and other ingredients from Hildegard's cuisine. Cinnamon, galangal, and bertram are included for good tolerability. Psyllium seeds, the mature seeds of a plantain species, have a positive influence on digestion. We have enhanced this delicious muesli with another valuable ingredient: amaranth. The Inca grain is rich in lysine, an essential amino acid that is important for a balanced diet. Since locally grown cereal grains are low in lysine, combining them with amaranth is ideal.
