Stirred, not shaken: Scrambled eggs are made by beating raw eggs and, if desired, mixing them with a little water, cream, or milk and seasoning. Melted butter or oil helps the mixture fry evenly and quickly in the pan. For a vegan version, tofu can be crumbled, fried, and mixed with yeast or wheat flakes and a little vegan yogurt to create a scrambled-egg-like consistency. Kala Namak salt can provide an additional egg-like flavor. Ingredients: Sea salt, sweet paprika, garlic, onion, parsley, rosemary, oregano, smoked jalapeo (jalapeo, smoke), bay leaves.
