What are oleoresins? Oleoresins are liquid or viscous, natural spice extracts used to naturally color or flavor all types of food. During production, the extracts are removed from natural spices under high pressure, usually with the aid of steam, leaving them as flavoring components. Why are oleoresins used? Unlike essential oils, oleoresins are not filtered or purified further. They therefore contain significantly more flavor, which, together with the naturally included components, tastes more characteristic of the spice and is organoleptically indistinguishable from a natural spice in the finished product.
