Bottarga di Muggine is dried, salted, and ground mullet roe, ideal for refining and seasoning a variety of fish dishes. Fry monkfish medallions, place them on a bean cassoulet, and sprinkle the medallions with bottarga. It has a mild flavor and is not overly salty. It is also particularly popular in Japanese cuisine.
