Candied orange peel is traditionally used in Christmas baking, including stollen, gingerbread, honey cake, fruit bread, and other fruit-based pastries. The orange peel is soaked in water, cooked in salt water, and then repeatedly simmered in sugar syrup and cooled until it develops its characteristic bittersweet flavor.
