By tradition, tomato paste originated from the desire to preserve tomatoes, a highly perishable product, over time without altering them. This fruit is very rich in water and is delicate, making it susceptible to deterioration from external factors. Concentrate then became a homemade product. Since tomatoes are easier to grow in warm, temperate climates, tomato concentrate is considered typical of Mediterranean regions, where many homemakers still prepare tomato paste by hand. Tomato paste is essentially the fruit's dry matter extracted by evaporating its organic liquids. Fresh, ripe tomatoes are reduced to a sauce by removing the skins and seeds, then salted and spread over large wooden boards in the sun. The watery part gradually evaporates, leaving a thick, full-bodied, dark cream. It is preservedproperly covered with extra virgin olive oilin thoroughly sealed jars and stored in a cool place.
