This white dressing from AcetoModena is made with cooked white Trebbiano grape must and white wine vinegar infused with mustard seeds that float to the surface. Its strong mustard flavor revives the taste of dishes, giving them a distinctive, slightly spicy flavor. Try it with fish, white and red meat, or salads.
