Scientific name: Foeniculum vulgare. Origin: Polipotamos, Evia, Evia Island, Greece. Fennel seeds, or common fennel (Foeniculum vulgare), have been used since antiquity in cooking and traditional medicine. The seeds are collected toward the end of summer, when they have developed a gray-green color, and are then cleaned and dried. The seeds, roots, shoots, and leaves of the plant all have a characteristic aroma very similar to anise. It is an aromatic and flavorful spice with many uses in cooking and distilling, and is an important ingredient in Indian and Middle Eastern cuisine. To prepare as tea, use one tablespoon and steep for approximately 510 minutes at 100C. Ingredients: 100% fennel seeds.
