The firm, ivory-colored core has a flavor reminiscent of a combination of asparagus and artichoke. Preserved in brine seasoned with sea salt, hearts of palm add a fresh note to salads and enhance many appetizers. They are also ideal when cooked as a side dish for meat dishes.
