Umeboshi literally means dried plums and they are also known as salted plums. Although often called plums, ume fruits are botanically more closely related to apricots. They are especially popular in Japan and are traditionally eaten for breakfast, often with green tea, or served with rice in bento meals and onigiri. The still-green ume fruits are cleaned and layered with salt in large wooden vats. The salt draws water from the fruits, while a weighted lid keeps them below the liquid level and further presses liquid from the ume fruits. After one to two months of fermentation by lactic acid cultures, the fruits are dried outdoors for four to seven days, depending on the weather. They then become white and are soaked with shiso leaves in the umeboshi brine created during lactic acid fermentation. After about one week, the fruits are removed and layered with the shiso leaves in barrels, where they mature for another one to two years. During this maturation period, the umeboshi absorb their characteristic color from the purple shiso leaves. They have a salty, sour taste. Umeboshi are often served as an accompaniment to rice in a bento or processed into bainiku paste. The fruits contain high amounts of alkaline minerals such as iron, calcium, manganese, and potassium. Umeboshi sauce recipe for 4 servings: Pit and pure 170 g of Food-United umeboshi. Finely chop 1 small red chili pepper and mix it into the umeboshi paste. Scald 4 tomatoes with hot water, peel them, finely chop the flesh, and pure it. Mix everything thoroughly and use as a seasoning. Ingredients: Ume fruits, sea salt, shiso leaves.
