Description

  • GILLOT NOIR: Camembert de Normandie AOP with Protected Designation of Origin (PDO), made from raw milk; a traditional French Camembert from the town of Camembert. With 45% fat in dry matter, it contains less fat than Brie.
  • PRODUCTION: Penicillium camemberti mold, raw milk, and a long, carefully monitored ripening period create a French soft-ripened cheese with a unique aroma. Delivered in the traditional small round wooden box. Acidified raw milk is coagulated with rennet to make the Camembert.
  • RIPENING: The degree of ripeness determines the intensity of the aromas. At an early stage, with a white center, it is more nutty and spicy; the longer it ripens and the smaller the white center becomes, the milder it is. This flavor development differs from blue cheeses or washed-rind cheeses, which become more pungent as they ripen.
  • SERVING: Enjoy with or without the rind on bread or baguette; breaded as baked Camembert with fried parsley and cranberry compote; as an ingredient in Bavarian Obatzter; halved and filled with cream cheese as a cheese cake; or simply on its own with Champagne or chilled ros, accompanied by grapes or figs.   • NUTRITION: Contains high amounts of vitamin B2, calcium, and phosphorus. Per 100 g of Camembert: 20 g protein, 570 mg calcium, and 350 mg phosphorus.
