These mate leaves come from the mate plant, an evergreen plant native to South America. The leaves are dark green and oval to elongated in shape. Mate plants are traditionally cultivated in many South American countries and used to prepare mate tea. Mate tea has a distinctive flavor described as invigorating and refreshing, and many people drink it as an alternative to coffee. In Argentina, Uruguay and Paraguay in particular, mate tea is an established part of cultural and social life. In Argentina, Brazil and Paraguay, it is traditionally served from a gourd and consumed through a straw called a bombilla, which keeps the leaves in the drinking vessel. Preparing mate tea is almost a ritual, practiced both at home and while traveling. To prepare it traditionally, fill the drinking vessel halfway with mate leaves, close it and carefully shake it. Moisten the leaves with water at 158167F (7075C) and let them steep for about 20 seconds so they can swell. Insert the bombilla into the vessel, then add hot water.
