Isomalt is the only sugar substitute in the world made exclusively from sugar beets. It is produced in a specially developed two-stage process: first, sugar (sucrose) is enzymatically converted into isomaltulose. This is then converted into isomalt by adding hydrogen. Isomalt is an odorless, white, crystalline substance containing approximately 5% water of crystallization.
