Since the Song Dynasty (9601280), unfermented green tea has been naturally flavored by adding fresh jasmine flowers. Initially, this was done to enhance lower-quality teas; today, it is used to refine high-quality teas. After the jasmine flowers have opened, they must be mixed with the moistened tea within 24 hours. This is the only way the aromatic flower nectar can be absorbed by the tea leaves. The withered jasmine flowers are then sorted out by hand. High-quality jasmine teas contain no flower petals or only a few. Most jasmine teas come from Fujian. Ingredients: Green tea refined with jasmine flowers Instructions: 10 g (45 teaspoons) per 1 liter of water; water temperature: 80; steep for 23 minutes.
