The lentils from Le Puy-en-Velay, like fine wines, have the status of a protected designation of origin (Appellation d'Origine Contrle, AOC). Only lentils actually grown in this region of the French Auvergne may be called Lentilles du Puy; all others are referred to as green lentils. The mineral-rich soil of the Auvergne is ideal for growing this aromatic legume. Puy lentils are characterized by their small, delicate shape, thin blue-green marbled skin, and nutty, mildly spicy flavor.
