The dough for these organic egg mie noodles is stirred rather than shaken. Initially crumbly like cookie dough, it gradually comes together, is pressed into extra-long strands, and allowed to rest briefly. It is then rolled repeatedly until thinner and cut into narrow strands with fine knives. The noodles are preserved with steam. Unlike the customary production method in Asia, they are not fried but only steamed with hot water. This special pre-cooking process means the mie noodles only need to be boiled briefly or allowed to steep at home. Finally, they are formed into their characteristic block shape before being gently dried to remove moisture. Cook the mie noodles like regular pasta in plenty of salted water for approximately 35 minutes, or pour boiling water over them and let them steep, covered, for approximately 9 minutes.
