This seasoned vinegar specialty is suitable not only for fresh salads but also for preserving foods. Whether fish, meat or vegetables are pickled, the marinade benefits from the balanced herb flavors. Tarragon (dragon mugwort, snake herb) is an appetizing herb and a perennial plant growing up to 1 m tall. Lemon balm (bee balm, honey flower) is a hardy perennial with a strong lemon fragrance. Basil (king's herb, Saint Joseph's little herb) is an annual culinary herb typical of Mediterranean cuisine. Dill (cucumber herb, dill fennel) is an annual herb; dill tips are a popular Asian culinary herb. Sage (Sophie) is an evergreen shrub with an intense aroma, used as a spice in Mediterranean cuisine. Thyme (Roman wild thyme, field caraway) is a decorative shrub known for its essential oil. Lovage (Maggikraut, love parsley) is a perennial with stems up to 2.4 m tall and intensely aromatic essential oil.
