Pasta Di Aldo is named after the first two letters of the family names of Luigi Donnari and his wife, Maria Alzapiedi, who make approximately 50 kg of dried pasta per day in their small workshop in Monte San Giusto, in Italy's Marche region. Using a variety of local wheat varieties for each product, the pasta is kneaded by hand, rolled on a small machine, cut by hand, and then hung to dry slowly at low temperatures for natural drying. The final step is packing it in fine, handcrafted boxes. The resulting pasta has a rough texture and a light egg color, making it light and fragrant when cooked. Widely regarded by Italians as one of the best artisan pastas in Italy, it has also been endorsed by Heston Blumenthal, who described it in his book "In Search of Perfection" as "perhaps the best pasta in Italy."
