• PRODUCTION: Aromatic white wine grapes for a sweet white dessert wine are usually harvested late to achieve high must weights and concentrated aromas. After gentle pressing, fermentation is stopped by cooling or adding alcohol to preserve natural residual sweetness. The wine is typically matured in stainless steel or neutral wooden barrels to retain freshness and fruit, followed by a resting period in tank or bottle for aroma integration.
