Vintage pepper: 2016. Our black Malabar pepper, also known as Tiger Pepper, is harvested entirely by hand. The pepper berries are picked green shortly before ripening. Fermentation then changes the berries from green to deep black. They are subsequently sun-dried, giving them their wrinkled appearance. Our Tiger Pepper comes exclusively from smallholder producer communities located practically in the middle of nowhere, in a nature reserve far from major cities. Tigers and elephants still live here in the deep south of India. Harvest quantities are limited, which is why this fruity, hot, strongly aromatic pepper is highly valued. Always use black Malabar pepper freshly ground, as this best brings out its distinctive, intensely fruity aroma. It is suitable for a very wide range of dishesin principle, any dish traditionally seasoned with black pepper. Ingredients: 100% black Malabar/Tiger Pepper.
