• Modica chocolate is a specialty created in the beautiful Sicilian town of Modica, known for its grainy texture.
• The cocoa is heated to no more than 40C so the sugar does not dissolve, creating the chocolates characteristic rough, firm texture.
• On the palate, the sweetness of the sugar crystals combines with the slight bitterness of dark chocolate and the mild acidity of sun-ripened lemons.
• Traditionally, Modica chocolate contains no more than three ingredients: ground cocoa, sugar, and, for this variety, lemons. Milk, butter, vegetable fats, and lecithin must not be used.
