Description

  • Umeboshi are ume fruits preserved in salt and red shiso leaves.
  • Botanically, ume fruits are more closely related to apricots than plums.
  • Round, reddish to brown fruits with a very salty, sour taste.
  • Matured for up to 2 years.
  • Made with only three ingredients: ume fruits, sea salt, and shiso leaves.
  • Free from flavors, additives, and preservatives.
  • Traditionally served with green tea, rice, in bento, or in onigiri.

Product descriptions The still-green ume fruits are harvested, cleaned, and layered with salt in large wooden vats. The salt draws water from the fruits, while a weighted, well-fitting lid keeps them below the surface of the liquid. The lid also presses additional liquid from the ume fruits. After fermenting for one to two months through lactic acid cultures in the vats, the fruits are dried outdoors for four to seven days, depending on the weather. The fruits are then white and are soaked with shiso leaves in the umeboshi brine produced during lactic acid fermentation. After about one week, the fruits are removed and layered with shiso leaves in barrels, where they mature for another one to two years. During this maturation period, the umeboshi absorb their characteristic color from the purple shiso leaves. They then have a salty and sour taste and are traditionally regarded in Japan as being beneficial for the gut. Umeboshi are often served as an accompaniment to rice in a bento or processed into bainiku paste. The fruits contain high levels of alkaline minerals such as iron, calcium, manganese, and potassium. Umeboshi Sauce Ingredients for 4 servings: 170 g Food-United umeboshi 1 small red chili pepper, finely chopped 4 tomatoes Preparation: Remove the pits from the umeboshi and puree them.
